Roasted Chicken and Root Vegetables

There’s not a lot of dinners much simpler than roasting a chicken. Am I right, or am I right? To me, it is one of the easiest and delicious meals out there. It’s good for when you have a lot to do around the house and need something easy for dinner, it is easy for Sunday lunch, and it is even easy if you just want to eat it because it’s delicious.

You can use this recipe and change it however you’d like: different spices, herbs, and vegetables..they pretty much all taste great.

The Cast of Characters: whole chicken, sweet potato, russet potato, carrots, onion, salt, pepper, olive oil, worcestershire, liquid smokeĀ , rosemary, and basil.

To begin, go ahead rinse, pat dry, pull the bag out of the cavity and butterfly your whole chicken by cutting the backbone out. If you don’t know exactly how to butterfly a chicken, you can watch that here on this Youtube video.

After you cut the backbone out and have it flattened out, you can add your seasoning: salt and pepper to taste, basil (1 tablespoon), and rosemary (sprinkle until covered about 2-3 tablespoons).

Add 2 tablespoons of olive oil to a pot (I use cast iron because it makes the chicken taste better. I BELIVE!!!) and throw the chicken in skin side DOWN. In the picture this is skin side UP. Sear it on high for 6 minutes, then flip it over to skin side UP.

Now, dice up your vegetables.

Throw them into a plastic bag and add: 1-2 tablespoons olive oil (just enough for the herbs and spices to stick), 2 teaspoons of salt, 2 tablespoons of pepper, 1 teaspoon rosemary, and 1 teaspoon of basil. Seal the bag and shake, shake, shake until combined.

Throw your veggies into the same pot as your chicken. Now for the good stuff: add 2 tablespoons of liquid smoke and one tablespoon of worcestershire. Stir the veggies around.

Put into a 350 degree oven for 1 hour 10 minutes, uncovered.

Then, COVER with a lid for 30-45 minutes until veggies are soft.

You can cut up the chicken afterwards, or serve it whole. I serve it whole because it literally falls off the bone. It is soooo delicious and flavorful. My mouth is watering as I type this!

1 Whole Chicken, Rinsed and Patted Dry

Salt and Pepper, to taste

Basil, 1 Tablespoon

Rosemary, 2 Tablespoons

Liquid Smoke, 2 Tablespoons

Worcestershire, 1 Tablespoon

Olive Oil, 2 Tablespoons


1 Sweet Potato, diced

1 Russet Potato, diced

1 Yellow Onion, Sliced

2 Carrots, Quartered

Olive Oil, 1-2 Tablespoons

Salt, 2 Teaspoons

Pepper, 2 Tablespoons

Rosemary, 1 Teaspoon

Basil, 1 Teaspoon


Deer Steak– The Right Way

Deer steak is just a little slab of HEAVEN on Earth, but seriously. If you have ever had Deer steak and you don’t like it, then you are not doing it the right way. Want to know how? Read on, my friend.


Start by cutting your pieces of steak into the size you want.

We are going to fry these babies up, that’s the right way to do it!


Go ahead and crack 4 eggs with 3 cups of milk.

Whisk until combined.


Soak the Deer steak in this concoction for a minute or two.


After soaking the steak in the milk and eggs, coat it completely with this seasoning:

2 cups of flour

1 tablespoon of salt

3 tablespoons black pepper

2 tablespoons cayenne pepper


Stir until combined then coat the steak very heavily.

The thicker the coating the better, in my opinion.




Throw it into a hot pot of canola oil (or peanut oil).

Before you add the steak, throw a little flour or water in the oil to make sure it is ready.

If it is ready, the oil will sizzle upon contact.


Cook until golden-brown…

About 2-5 minutes.



2 cups mayonnaise

2 tablespoons horseradish

1 cup ketchup

2 tablespoons brown mustard

1 tablespoon black pepper

1 tablespoon cayenne pepper

1 tablespoon worchestire sauce


Stir until combined and you’re ready to eat, my friends!

You can add however much ingredients to the sauce, this is just how we like it!

Alyson’s Favorite Chocolate Chip Cookies


Have you ever met anyone who doesn’t like a chocolate chip cookie? I know I haven’t. I do have to say that if you have, then make them this chocolate chip cookie recipe.. I think these may change their mind. They are literally THE BEST. Everytime I make them for people they are a big hit and they even say that these chocolate chip cookies are the best they have ever had. You don’t believe me? Just try it! Here’s how…

First, you will need these items for your cookie ingredients.

*DISCLAIMER*** You do not need milk to make these cookies,

but what are cookies without milk to go with them when they’re done?!


Salt, sugar, brown sugar, butter, eggs,

vanilla extract, baking soda, chocolate kisses (minis)


You will first need 1.5 cups of softened butter.

Yes, 1.5 cups. This is no typo.

Please don’t be scared..


Into a large mixing bowl, throw in your 1 1/4 cup of granulated sugar


I am not bleeding. I promise my hands are clean.

Earlier today, I dropped and busted a whole bottle of red nail polish on the tile floor.

Yes, it happened.

1 1/4 cup of packed brown sugar


1 tablespoon of vanilla

(I always add a splash more)


2 cracked eggs

Mix all together with a large spoon, then add the whisk attachment to an electric mixer


1 teaspoon of salt

2 teaspoons of baking soda


You will need 4 cups of flour..

Go ahead and turn your electric mixer on before adding in the flour,

then slowly add the flour in 1/2 cup at a time until you reach 4 cups.

It will all come together in a dough-like form.


Add in your 24 oz of chocolate chip minis and give it another whirl.

When your dough looks like this you are done mixing.


Roll out some dough balls and place them on a non greased cookie sheet.

You will slide them in a 350 degree oven for 11-14 minutes.. depending on the size of your cookie.


Take them out of the oven and place them on a cookie cooling rack for 10 minutes.



Don’t forget that glass of milk.


1 1/2 cups of butter, softened

1 1/4 cups granulated sugar

1 1/4 cups packed brown sugar

1 tablespoon vanilla

2 eggs

2 tablespoons bakingĀ soda

1 tablespoon salt

4 cups all-purpose flour

24 oz. of chocolate chip minis

Preheat oven to 350 degrees. Mix together sugars, eggs, vanilla, and butter. Hand-stir together. Next, add in the salt, baking soda, and flour. Mix together with electric mixer. Add in chocolate chip minis and stir until dough is formed. Place cookies on a sheet and bake in the oven for 11-14 minutes. Let cool on rack. Enjoy with a glass of milk.
