Oat Ball Delite

If you haven’t tried these delicious oatmeal balls, then you are missing out!! They are healthy, sweet, and give you ENERGY! Cut out the coffee and caffeine, and trade it in for one of these instead. Your body will thank you later! 

YOU WILL NEED:

-1 cup of dried oatmeal

-1/2 cup dried coconut flakes

-2 tablespoons of chia seeds

-1/2 cup of dried flaxseed

-1/2 cup of chocolate chips

-1/2 cup of peanut butter

-1/3 cup of honey

  
Stir everything together in a bowl. Side note: these things are STICKY! You pretty much have to get into with your bare hands. Throw in some extra chocolate chips, and it’ll be worth it. 

Roll them into little balls as big or little as you’d like. Whatever tickles your fancy. Before eating, store in the refrigerator for at least 30 minutes so they will harden a bit, then enjoy!

You can store in the fridge up to five days, or freeze them! I freeze mine in individual bags so they are easy to grab on the go for breakfast every morning!  Quite frankly, they are a pretty nice sweet treat at night while I am relaxing and watching tv!

Alyson’s Favorite Chocolate Chip Cookies

Have you ever met anyone who doesn’t like a chocolate chip cookie? I know I haven’t. I do have to say that if you have, then make them this chocolate chip cookie recipe.. I think these may change their mind. They are literally THE BEST. Everytime I make them for people they are a big hit and they even say that these chocolate chip cookies are the best they have ever had. You don’t believe me? Just try it! Here’s how…

First, you will need these items for your cookie ingredients.

*DISCLAIMER*** You do not need milk to make these cookies,

but what are cookies without milk to go with them when they’re done?!

Salt, sugar, brown sugar, butter, eggs,

vanilla extract, baking soda, chocolate kisses (minis)

You will first need 1.5 cups of softened butter.

Yes, 1.5 cups. This is no typo.

Please don’t be scared..

Into a large mixing bowl, throw in your 1 1/4 cup of granulated sugar

I am not bleeding. I promise my hands are clean.

Earlier today, I dropped and busted a whole bottle of red nail polish on the tile floor.

Yes, it happened.

1 1/4 cup of packed brown sugar

1 tablespoon of vanilla

(I always add a splash more)

2 cracked eggs

Mix all together with a large spoon, then add the whisk attachment to an electric mixer

1 teaspoon of salt

2 teaspoons of baking soda

You will need 4 cups of flour..

Go ahead and turn your electric mixer on before adding in the flour,

then slowly add the flour in 1/2 cup at a time until you reach 4 cups.

It will all come together in a dough-like form.

Add in your 24 oz of chocolate chip minis and give it another whirl.

When your dough looks like this you are done mixing.

Roll out some dough balls and place them on a non greased cookie sheet.

You will slide them in a 350 degree oven for 11-14 minutes.. depending on the size of your cookie.

Take them out of the oven and place them on a cookie cooling rack for 10 minutes.

INDULGE.

Don’t forget that glass of milk.

Ingredients:

1 1/2 cups of butter, softened

1 1/4 cups granulated sugar

1 1/4 cups packed brown sugar

1 tablespoon vanilla

2 eggs

2 tablespoons bakingĀ soda

1 tablespoon salt

4 cups all-purpose flour

24 oz. of chocolate chip minis

Preheat oven to 350 degrees. Mix together sugars, eggs, vanilla, and butter. Hand-stir together. Next, add in the salt, baking soda, and flour. Mix together with electric mixer. Add in chocolate chip minis and stir until dough is formed. Place cookies on a sheet and bake in the oven for 11-14 minutes. Let cool on rack. Enjoy with a glass of milk.
